Mit Butz und Stingl - Tyrolean for: nothing goes to waste


Potatoes from our fields, fruit and herbs from our own garden, meat and milk sourced from local producers: At the Stern, we cook regional, seasonal and „richtig guat“ (Tyrolean for really good) Tyrolean cuisine.


In Tyrolean terms, “mit Butz and Stingl” literally means to eat up to and including the “core and stem”. The meaning is that nothing should be left over from the apple or pear you are eating. This not only avoids waste, but is also the healthy thing to do. The partitions between the chambers in the fruit’s core are rich in fiber which is good for our digestive system.

But we not only deal with all of our food with “Butz and Stingl”, we also promote regionality, seasonality and biodiversity.

 

At the Stern, we endeavour to grow different potato and grain varieties in our fields. In front of our hotel, less frequently found types of apple and pear trees can be found, which contribute to the preservation of biodiversity. Our milk comes from the local village farmer, herbs come directly from our own garden and the meat and fish is sourced from local producers.

The food is tasty and genuinely Tyrolean – because that’s what the Stern cuisine stands for: lovingly cooked according to old family recipes and prepared from regional ingredients. That’s why grandma’s apple strudel is always on the menu. The magnificent foods of our region lend themselves perfectly to a modern and creative interpretation, as well as many imaginative vegetarian dishes that we have created.

 

The Stern is an inn as it should be. We spend time together, eat, laugh and enjoy music. From the moment you are greeted by our friendly hosts, you feel a warm welcome, a warmth which extends through the cosy Tyrolean-style rooms known as “Stuben”, the sunny terrace and the outdoor garden dining area, with its centuries-old chestnut trees.

At the Stern, we not only cook food ourselves with the ingredients we grow in the fields and gardens or collect in the forest, but we also like to share our knowledge with our guests.

Gathering and cooking during the fruit picking tour

Search for and collect natural delicacies and then cook and taste them together. From grinding flour to processing herbs, from making dandelion honey to herb sticks, soaps and ointments – we share all of our interesting knowledge about sustainable food.
